"color me surprised" = 「驚いた」

"color"をググるとMacmillian Dictionaryのサイトで以下のように説明されています。

"color me curious/surprised/stupid: used to say that someone has a particular quality"

「誰かがある特質（興味、驚き、馬鹿）を持っていると言うときに使われる」

UrbanDicitonaryでは以下のとおりです。

"A term that people use to say that they are something."「誰かがなにかであると言うときに使う用語」

使い方は*"Colour me -ADJECTIVE-."* 

例、"Colour me impressed." = I'm impressed.

子供向けの色塗りが語源です。あるポップソングの中でいろいろなムードの色に塗って欲しいと歌ったことから今の意味につながったようです。日本の歌にも「悲しい色やね」とかあった気が。
